Asparagus To Fall In Love With

My articles about asparagus released a wave of discussion. I always try to answer every question you send in. Please understand that I can’t answer questions about chemical research or health issues about recipes or ingredients. That would bust my knowledge, my background and my possibilities to publish.

The many questions about more asparagus recipes I like to answer as follows. First, there are many many to find through the internet. I like today to post 3 special ones which we enjoy very much and we tested several times with great success.

1. Salmon-horseradish parcels with asparagus and avocado-coriander sauce.
See the picture above. I tell you it is so delicious, you should try it.

Ingredients.

300 gram asparagus (green or/and white)
30 grams of butter
Salt, pepper to season
20 slices of smoked salmon
1 lettuce
Cream horseradish from the tube or jar

Avocado cilantro sauce.

1 lime, untreated
1 avocado, small, ripe
1 tablespoon white Balsamico vinegar
1/2 teaspoon Dijon mustard
100 grams of natural yogurt
1/2 bunch of coriander
Salt, pepper to season
Chilli powder to season

How to do.

Wash the asparagus. Heat the butter and slowly sweat the asparagus in it, season with salt and pepper and let cool.

Pluck the lettuce into individual leaves and wash. Lay out the salmon slices, in each case spread with the horseradish mayonnaise, place a lettuce leaf on top. Wrap three rods of asparagus in each. Continue until all salmon slices are rolled up.

Avocado cilantro sauce.

Rub the lime peel finely, then squeeze out the lime.
Chop the coriander.
Beat the avocado flesh with the lime zest, a little bit of lime juice, balsamic vinegar, mustard and natural yogurt.
Season the cream with chilli until cream tastes spicy and then stir in a tablespoon of cilantro.
Distribute the salmon rolls on a plate.
Put the lettuce in between and drizzle with the avocado and coriander sauce.
This is a recipe after the German star chef Johann Lafer.

Same recipe as above, just leaving the avocado sauce and serving horseradish sauce only. A fantastic starter.

2. Pizza with green asparagus.

This recipe turns classic pizza into a treat for all gourmets.

Ingredients.

500 gram green asparagus
Salt, pepper to season
1 red onion
1 tablespoon olive oil
40 ml of dry white wine
200 g of creme fraiche or creme double
1 to 2 teaspoons of dried herbs (thyme, rosemary)
Abrasion of an untreated lemon
1 fresh pizza dough (400 g)
200 g of air-dried ham or prosciutto in thin slices
40 g of grated Parmesan

How to do.

Wash asparagus, cut off woody ends, peel lower third of the stalks (with green asparagus you don’t need to peel) and blanch for about 2 minutes in salted water, then fry cold. Peel the onion, cut into thin rings. Heat oil in a pan and lightly brown the onion. Deglaze with white wine, mix in salt, pepper, simmer briefly, until the white wine is almost completely evaporated.

Let cool down. Preheat the oven with sheet metal to 220 ° C (450 F) bottom and top heat.
Mix in the creme fraiche with dried herbs, lemon rind and 1 tablespoon of lemon juice, salt and pepper. Lay out the dough on a baking tray sheet sized with baking paper.

Season the herb cream, spread the dough on it and cover it with a slightly overlapping ham slices. Place the asparagus spears diagonally next to each other. Bake in the oven for about 10 minutes. Remove pizza from oven and place the onion rings on top, sprinkle with Parmesan. Bake for another 5 to 7 minutes, cut diagonally into strips and serve. Pic from „Mein Schoener Garten“.

3. Green asparagus wrapped in roast beef.

Ingredients.

300 gram green asparagus
8 slices of roast beef  (in Uruguay we use slices of milanesa)
a bit of salt and some freshly ground pepper to season
80 g of Parmesan
250 gram creme fraiche or creme double
2 tablespoons cooking oil, sunflower oil
4 tablespoons of cognac or good brandy

How to do.

Third asparagus spears. Dab roast beef dry and salt and pepper from both sides. Grate the Parmesan finely on a grater. Mix cheese with half of creme double and season with pepper and salt.

The best measure with a cake server or tablespoon on the roast beef slices. If the mass is too firm, hold the cake server or spoon briefly under warm water. Place 3 asparagus pieces on the slices of meat and roll up from the short side. Stick with toothpicks to hold parcel. See that meat is not overlapping to much, otherwise it will not roast well.

Heat the oil in a coated pan. Roast beef rolls in portions from all sides evenly over medium heat, so that they get color. Then cook all rolls together with lid for about 10 minutes. Take out the rolls, remove the toothpicks and keep warm. Add brandy to the pan and deglase the gravy. Stir in the remaining creme double. Season the sauce with salt and pepper and pour over the rolls.

Wild green asparagus in our garden in Australia. See the green stems coming out between the dried bushy asparagus grass. Right, wild asparagus for sale on a french market. If you see this sometimes, never let it go, take the chance for a feast and buy some.

Tips.

For all the above shown recipes I used green asparagus, because of my Uruguayan readers, where we can’t buy white asparagus. But same results can be achieved as one use white one. As well as „wild green asparagus“ which we used in Australia so often.  Enjoy !!

Typical Uruguay

One picture says more than 1000 words, right ?

I had the chance, a while ago, to look into an Uruguayan drivers license brochure.
It was great fun, as funny as to watch Uruguayans driving !!
By example in this brochure is no clue written about, how to drive in a roundabout.

That’s why I had a lady, this week in Atlantida, in front of me STOPPING
IN THE MIDDLE OF A ROUNDABOUT AND GIVING WAY TO THE
UPCOMING TRAFFIC FROM THE RIGHT. Ha ha ha, it was great fun !!

Three examples out of this brochure I had seen:

First I was wondering which sign is meaning what and when and where and ….. ?
I found all three in official Uruguayan drivers license brochure.
May be a teaching favor for Uruguayans driving into foreign country’s !?

Second, I am wondering about the meaning of those ones ??
I also found all three in official Uruguayan drivers license brochure.
Signs could mean “ NO PARKING “
“ Strong NO PARKING “
“ Very very strong NO PARKING „.
or
Parking is permitted, because „no parking“ is crossed out ?!

Third, the only one I directly could understand, very clear, is this following one :
Don’t use snow chains ! or
Snow chains in Uruguay forbidden ! or may be
„USE SNOW CHAINS“ ??? not crossed out, so may be (for Uruguayans) aloud !?
Just for insiders, there is never ever snow in Uruguay,
but may be they look into the future – climate change can bring up some !?
Found in official Uruguayan drivers license brochure.

No wonder that most Uruguayan drivers have problems,
which we will never understand !!

I strongly believe, that most of them don’t know how an indicator works and how a driver must switch to get a left or right light flashing.

That’s why most drivers never use their indicators, or they use right light and drive left or the other way round.

If they get nervous in traffic or they are lost somehow, they switch on the ALARM lights. That means all of us other drivers: „I will do something in a minute, watch me – YOU have to be careful now“ !

Some will never change.

These people may think they are still in the 1930’s when in Uruguay left hand driving was usual, like in Australia or India. Or they might think they can drive as they like.

The picture shows Avenida 18.de Julio, Montevideo in the 1930’s. From World Transport History.

Did you know ?  Until 2nd of September 1945, in Uruguay driving was on the left, as in the UK. The „General Traffic Ordinance“ states from 1918 until then, that „all vehicles have transit for the left hand side of the road“.

The change took effect at 4.00 am on a Sunday morning which dawned very sunny. There was established  a decree that said, that until September 30 could not run a higher speed that to 30 kilometers per hour. One month whole Uruguay at speed 30 km/h.  WOW !

This decree foresaw acclimate drivers and pedestrians to this novelty and thus prevent possible accidents. Contrary to expectations, that Sunday there was no unusual accidents.

This picture shows Avenida Andes, Montevideo in the 1930’s. From World Transport History.

The authority’s were pleased with the success of prevention campaigns in the media and others measures which includes some drills to habituate Montevideo’s people. That day was classified as „No mayor problems“ and the news were published as novelty occupying whole covers in the capital’s newspapers.

Even after change of transit way, the cars still had the steering wheel on the right. It took years to change that. On the other hand, that’s the reason why we still see in Uruguay Oldtimers mostly with right hand steering.

Finally a page of an education brochure.

Road Education Uruguay.

Traffic signs are our guide on the streets and roads. They indicate distances between cities, curves, bridges and everything that the driver needs to know about the road.

Prevention Signs: Their purpose is to warn the user of the road of the existence of a danger and/or unforeseen situations of a permanent or temporary nature, indicating its nature.

Regulatory Signs: Its purpose is to indicate to the user of the road the limitations, prohibitions or restrictions on its use, and whose violation constitutes a lack. In the circular signs the distinctive colors are: rings and oblique lines in red, white background and black symbols

Information Signs: This type of vertical signals do not transmit orders or prevent irregularities or risk in public roads, unless they contain regulatory or preventive signals, therefore they have no legal consequences. They are designed to identify, guide and reference places, services or any other useful information for the traveler.

They are placed on the side of the road (vertical) in a similar way to preventive in rural areas or to the regulations in urban areas or elevated on the road through stoops. The position varies according to the conditions of the road and the type of vehicular traffic.

Text and pic from La Education Vial.

The text was just translated into English, nothing changed at all. Next to this text was shown one picture as shown above. Every reader will wonder what is what and …….??
Ja, ja education is a special matter. Hope you enjoyed this little excurse from Uruguay.

????????????????????????????????????????????????????????????????????????
The blue „Parking“ sign at the begin of this post is a joke – may be !!??!!

Trump Again

My dear readers, since we had some discussions about the menace Trump, here the chart I was talking about. I do not understand why so little officials know about this. Sadly I can’t remember where I downloaded it from or who the copyright might have. Sorry !

Just have a look and make up your own mind:

Click on picture, it will supersize for a better view.

Just a bit more fun:

Sicherheitsreport 2019

An embarrassment for the free world and a crook in chief.

Schweinsberg.

Ja ja, Angela schaut ueber den grossen Teich.

Asparagus on Filo Pastry

Many of you asked for recipes about asparagus. There are so many in the internet websites that I don’t want to repeat them. But some are special and I love to share them with you. The special one I showed earlier (in my post Asparagus Pee) made with „Filo dough“ (also Puff-pastry called) and coconut milk, I post it here right now.

This lovely recipe is coming from a good friend who is cooking lots of recipes from the „veganfamily“. Its really a hit and you have to try it. As we use here in Uruguay green asparagus, one also can make all of the here shown with white asparagus.

Green asparagus on filo pastry with hearty coconut cream.

Here is a recipe that tastes great and is so easy to make. With green asparagus, it does not have to be peeled, not cooked, just baked in the oven.

Same recipe, cooked a different day.

Ingredients.

2 onions, peeled and chopped
2 garlic cloves, peeled and chopped
2 teaspoons salt
3 tablespoons of coconut oil
1 can of coconut milk (c. 400 g , 13 oz)
1 tablespoon lemon juice
100 ml of olive oil
500 g green asparagus
salt and pepper to season
10 leaves of filo pastry (about 30×30 cm)

The Filo sheets they used in Germany.
The ones we find here in Uruguay are mostly packed by 2 sheets (about 30x38cm) and a bit thicker then the above shown one. I have seen at least 10 different products, but we use mostly the Augusta or Tienda Inglesa one. 2 sheets for about 100,–peso (3,–US$).

How to do.

For the cream peel the onions and garlic and cut into pieces. Fry it in a saucepan with the salt in the coconut oil until the onion pieces are slightly brown. In a high-performance mixer or with a blender, mix the onion-garlic mixture with the coconut milk and the lemon juice to a cream. The cream should be slightly thickened. If this is not the case, tie with starch.

Preheat the oven to 180 degrees. Lay out a baking sheet with parchment paper. Place a sheet of filo pastry on the baking paper and brush with a little olive oil. Put a second sheet of filo pastry on top and brush with oil. Continue until all leaves have been processed.

Halve the onion cream and spread one half of the cream on the top filo pastry plate.

    The mouthwatering plate of Filo-asparagus.

Wash the asparagus, cut off the woody ends and spread the sticks over the cream. Brush the sticks with olive oil, season with salt and pepper and bake for about 20 minutes until the dough is crispy brown. Heat the remaining cream and serve together with the filo pastry asparagus.

Tips.

I have baked a few pieces of raw onion on top it. A rucula salad tastes perfect with this delicious meal and a glass of cool dry white wine will round it up.

The above recipe idea inspired for a modification of Filo and asparagus. Today is Superbowl night in Atlanta and we will watch it. Therefore we prepared the following.

Asparagus sticks.

It is so easy to make and absolutely delicious. The asparagus is very crisp with this recipe, we like it that way. If you want to soften it a bit better then blanch the stems for about two minutes in salted water.

Roll one stick of green asparagus into Filo dough (half sheet 15×30 cm is fine) and sprinkle with a bit of sweet paprika powder.
Place all rolls on a baking sheet on your oven plate and brush the rolls with olive oil.
Then bake them with 180-190 degree Celsius or 350-375 degree Fahrenheit in your oven for about 15 minutes, till they are crisp and golden brown. After about half time I would turn them and brush with olive oil the other side.

Serve them directly hot out the oven with a dip of sweet chilli sauce aside. You can keep these asparagus sticks for a few hours on a dry place and serve them cold. But they will loose the crispy taste. One can make sweet chilli sauce very easy by themselves or, as I do, use the finest sauce from Mae Ploy (original Thai sauce). Never seen in Uruguay. I always bring it from outside. You can keep it for many years, if opened once, in a fridge.

This delicious sauce I like to use for many occasions, especially with all kinds of fish. As a dip you will like it with French Fries, Lumpia, Spring-rolls, Chicken-wings, fried Shrimps and much much more. Hope you like it as much as I do.   ENJOY !!

Asparagus Pee

This weekend we had one of our favorite summer dishes, asparagus and salmon. Fantastic, but the first way to the toilet left once again this terrible smell of the urine. I know for many years that’s normal after consuming asparagus and it is no problem connected to it.

This time I was keen to find out why it happens and what the story is behind this unusual smell. So I checked the internet, wrote to an old friend who is a medic and always able to help me out with good answers. Here are the results in short.

  Asparagus urine. Pic from tag24.

Myth asparagus urine.

Not every person’s urine smells of a kind of asparagus orgy. The scientists still do not know exactly which enzyme has to break down which substance, so that the typical smell is produced, but there are guesses. But it is quite certain that there are some people who do not possess the relevant enzyme due to a gene mutation and therefore do not even develop the extremely-smelling substances.

However, there are also people who pee very well asparagus urine, but just can not smell it. We have a large body of genes responsible for our sense of smell, and it may well be that small mutations allow us to miss a few nuances. This is not so rare and can also occur with the asparagus smell. It doesn’t matter if it is green or white asparagus.

It doesn’t matter – both are smelling.

How did they find that out? It is not enough in this case, of course, to ask people only if they could find something mucky on the smell of their own urine. They also had to smell other people’s urine that had eaten either bread or asparagus. So it could be found that there are people who produce no asparagus urine (non-producer), although they ate asparagus and people who simply can not smell it (non-detectors).

He knew about. „A few Stems of Asparagus eaten, shall give our Urine a disagreeable Odour…“ Letter to the Royal Academy of Brussels, Benjamin Franklin, c. 1781.

The pee mechanism.

Our urine is produced in the kidney. There, superfluous water with a lot of nutrients and minerals is pressed through a small filter system out of our blood. After this first filtration, the water enters a long pipe system with different sections. Each section is very clever and responsible for the reabsorption of certain nutrients. The water itself is also brought back into our body diligently, so that we excrete only about 1.5 liters instead of the initially filtered 180 liters per day. These processes can be influenced by hormones, so that our body manages to stay in balance, even if we absorb too much of certain substances.

This is how most Germans like to eat asparagus. Some kind of ham, porkloin, steak as a side dish and garnished with young potatoes and Sauce Hollandaise.

In every person, this works with the pee in about the same. We eat asparagus and its chemical components are picked apart, broken down and transported by many enzymes. In asparagus, as in any other food, a variety of substances ends up ultimately in our urine. Only the substances that have a certain diameter are „freely filterable“ and can easily get out of our body. This does not include large proteins or glucose. By example, who pees sweetly, probably has diabetes and if the toilet water foams after peeing, there are too many proteins in the urine due to a disease.

Yes, it can smell horrible. pic from tag24.

What smells ?

After the asparagus meal, scientists can detect a whole series of substances in our urine, which only came in there through the consumption of asparagus. It is very difficult to say which of the substances smell just as weird and from which part of the asparagus this substance was split off. It is believed that the odorless, sulfur-containing aspartic acid (asparagusic acid) to adventurous-sounding substances such as S-methyl-thioacrylate and S-methyl-3- (methylthio) thioproponiate is degraded. It can brake your tongue.

This is how we buy it in Uruguay. Mostly imported from Peru. Fresh white asparagus is almost unknown and not available. This 450gram bundle was 361pesos, equal to 11.05USdollars, nearly 25,–US-dollars per kilogram. Similar prices as in Germany for „First Class White Asparagus“ !

Then the acid in the body turns into volatile sulfur compounds. When peeing these elements evaporate in the toilet and we shoot a very unpleasant smell in the nose. They are also sulfurous and sulfur is known to smell like rotten eggs.

Sulfurous flavorings in breast milk.

Here an interesting fact at the end. Breastfeeding mom’s with a great appetite for asparagus often have the problem that the infant does not like to drink their milk. The sulfurous substances can also pass into breast milk and do not taste and smell well to the little ones. Now you are informed.

  „I don’t like your milk“.

Some people now understand nothing because they have never noticed the strange smell. Because, as research done in 1987 revealed, about forty percent of the population are missing this enzyme. One found out that just a single gene, which is inherited, is liable.

Nevertheless, the asparagus should be savored, because its such a healthy and well tasting vegetable. Therefore we can overlook a bit of sulfur smell, right ?

Who wouldn’t like a dish like this one. Freshly boiled white asparagus with slices of smoked ham and a sauce Bearnaise ?

Additional information.

China is by far the world’s largest producer of asparagus. In 2013 it produced 7.000.000 tonnes, followed by Peru with 383.144 tonnes and Mexico with 126.421 tonnes. U.S. production was concentrated in California, Michigan, and Washington. The annual production in Germany is about 100.000 tonnes from which are 92% white asparagus.

Click on pic to size up for a better view.

In the most parts of the world is white asparagus relatively unknown and therefore the demand very low. It is a specialty of Western Europe.

  What’s the difference ?

What is the difference between white and green asparagus?

Spring is asparagus time. Freshly stung he ends up at the stalls of the directly marketed asparagus farmers or in the store, discounter and supermarket. Who wants to save the trouble with the asparagus peeling already buys green asparagus, as this does not need the peeling. But what else is the difference between white and green?

A feast ! Pan fried salmon on green asparagus with a relish of avocado, egg and „Frankfort Green Sauce“. Our guests enjoyed it very much. Serve a meal (its a very rich one) like this with a strong, dry white wine.

A lot of sun turns it green.

Green asparagus is like white asparagus a vegetable or common asparagus, botanically called Asparagus officinalis. Unlike white asparagus, green asparagus does not thrive in dams, but directly above the earth. As a result, it gets a lot of sun and forms the green leaf pigment, the chlorophyll. In addition, it grows faster than white asparagus and forms only a thin skin.

Asparagus officinalis. Drawing from an old flora lexicon.

Turn green into white ?

So you just have to peel green asparagus, if at all, just above the cut surface, or just cut off the bottom part of the bar. In the taste green asparagus is a bit stronger than bright asparagus. And the green asparagus is richer in vitamins and other valuable ingredients. In theory, you can make white asparagus also green. Meanwhile, there are also varieties that were bred specifically for the cultivation of white and green asparagus.

Last Tip.

We like the green asparagus mostly pan fried or grilled on the BBQ. A friend sent the pic of a vegan dish – green asparagus on Filo-pastry with a coconut cream sauce.

Our pan fried green asparagus with lemon and pepper.
The Filo-pastry dish.   I have to try it !!!

Sunset in Uruguay

My dear friend Jonathan asked in his periodical magazine MAGPIE  (you can order it through vozinglesa@gmail.com) his readers to send some pics of nice sunsets in Uruguay. The response was sadly almost zero and I could figure that he was a bit disappointed about!  That’s why I took over his idea, went through my files and found a few pictures worth to post.

It would be to much trouble to send them all to you, Jonathan, but I like to share them with you. Have fun and enjoy a few nice pics, taken during my travels in Uruguay. Click on pics, most will supersize for a better view, the small pics are often too dark.

The above three pictures are taken in Las Vegas from our terrace viewing down to the River Solis Chico.

Same sunset as above, submerging the house into deep orange colors.

Sunset watched from Bastion de Santa Rita, overlooking the Rio de la Plata, in Colonia. Sun is setting behind Isla San Gabriel.

Another sunset in Colonia from the same spot. This kind of view gave the name to the river „Rio de la Plata“ means „Silver River“. Because of the silver shine on the water people believed there must be a lot of silver under water. In distance again Isla San Gabriel.

Sunset over Laguna Garzon. In the foreground the „Floating Hotel Laguna Garzon“ near the circular bridge. Pic by „laguna garzon lodge“.

Picture taken with the sun. Sun sets against a weekend home at Cabo Polonia.

Beautiful sunset at the River Uruguay in Nuevo Berlin. Taken from the Parque Playa El Remolino.

Again two pics from our terrace in Las Vegas, watching the sunset over River Solis Chico. We have very dramatic sundowns here.

Sunset at Parque de Plata, in distance one can see Atlantida with the Antel tower.

A similar sunset at the beach of La Floresta, again with Antel tower Atlantida in distance.

This time a sunrise, taken from Piria’s Estancia Punta Lara in Argentina. Overlooking the Rio de la Plata with Uruguay on the other side.

Sunset at Rio de la Plata, taken from Playa el Calabres, near the Colonia International Airport Laguna de los Patos,  .

Two different days, two different sunsets at the same beach at the Uruguay River (which will be further downstream the Rio de la Plata) in Las Canas, Fray Bentos.

I like pictures taken with the sun, they produce a very special atmosphere.   here again Playa Grande in Las Canas.

And once more 2 different sunset’s in front our house overlooking the River Solis Chico. Often we had the chance to sip a glass of wine and enjoy natures spectacle.

This final one is taken from Laguna del Sauce overlooking a part of the laguna with the mountain Pan de Azucar in the distance.

For sure there are many many hundreds of other sunrise and sunset views and pictures out there. These are a few only and I hope you enjoyed watching them.  Till next time !

The Burger Humiliation

This week I read an article in the Washington Post about the „Trump Burger Disaster“. If it wasn’t so serious it really could be funny. In this post I like to share it with you. First the article from the Washington Post and then a few readers comments I found about it, as well as some pics I added.

President Trump’s extravagant, $3,000, 300-sandwich celebration of Clemson University.

By Philip Bump, Washington Post.
January 15 at 7:30 AM

In an administration overstuffed with bizarre moments and unusual events, Monday night’s celebration of the Clemson University Tigers at the White House nonetheless made a mark.

The Tigers, who won the national college football championship after not having to play my alma mater Ohio State, had the traditional meeting with the president, enjoying remarks from South Carolina’s senators after retiring to the State Dining Room for a meal.

A meal that was made up of fast food from various national chains.

“Because the Democrats refuse to negotiate on border security,” a statement from press secretary Sarah Sanders explained, “much of the residence staff at the White House is furloughed — so the president is personally paying for the event to be catered with some of everyone’s favorite fast foods.”

Personal paying and hoping for leftovers, right ?

As Trump repeatedly makes clear, it is indeed a lot of food, but perhaps not a lot of food in the context of a hungry college football team. In his comments, he claims that there are 300 burgers in total, which are obviously joined by a number of salads, chicken nuggets and, on a separate table under a heat lamp, fries and pizzas.

It raises a perhaps obvious question: Exactly how much did all this cost the president?

The way to figure that out is straightforward: Figure out how much food there actually was and multiply that by the cost. Or, it would be straightforward, if counting hamburgers were as easy as it seems in theory.

So here’s the spread on the main table as it looked prior to the players’ entrance. Once they were in the room, of course, those various hamburgers and (probably to a lesser extent, salads) were quickly plucked from the table.

Fast food is shown in the State Dinning Room of the White House. (Brad Mills/USA TODAY Sports)

Others were picked up by waiters in the room and distributed on platters in the style of servers at an elegant cocktail party. “Another Big Mac, sir? Please, help yourself.”

After considering far more wire photos and social media posts than you might expect, we’re pleased to report that the arrangement in the room looked like this. (Not shown: The candelabra.) There were sandwiches and pizzas from McDonald’s, Burger King, Wendy’s and Domino’s.

Using those same photographic sources, we then endeavored to tally how many of each item existed at the outset.

There were a few complicating factors with this that bear mentioning. First, Wendy’s, unlike McDonald’s, makes it a bit tricky to determine what type of burger is contained in a particular package. The calculations below assume that the Wendy’s burgers are all doubles, that the chicken sandwiches are Wendy’s spicy chicken and that the salads are the Southwest (McDonald’s) and full BBQ Ranch Chicken (Wendy’s). The pizzas we figured were Domino’s Favorite Feast.

If one want’s to know where Trump get his ideas from, here the answer. From other dictators, he admires so much, of course. Just a bit better, instead plastic bowls „White House“ serves on silver !! How decadent !!

Another problem is that stacking flat hamburgers makes counting hard, as does obscured views of the various piles. So below, our estimates of the number of each item and, thanks to the aptly named FastFoodMenuPrices.com, an estimate of the cost of each item.

And, finally, the White House had a unique system for distributing the french fries. The fries, which appeared to be from McDonald’s, given the accompanying ketchup packets, were transferred into White-House-branded cups, making it hard to determine how many there were at the outset. (In his taped remarks, above, Trump only revealed that there were “many, many fries.”) We figured an estimate of 200 large fries was about right.

Yeah yeah, many many fries !

What a dopey guy. Can’t write „hamburger“ and can’t count. Shame on him!

Brand Item Tray Count Cost Total
McDonald’s Big Macs 1 21 $5.35 $112.35
2 18 5.35 96.30
Chicken McNuggets 1 18* 5.35 96.30
2 18 5.35 96.30
Filet O’Fish 1 23 5.08 116.84
2 23 5.08 116.84
Quarter Pounders 1 27 5.08 137.16
2 28 5.08 142.24
Salads 1 14 6.42 89.88
2 14 6.42 89.88
Fries All 200* 2.53 506.00
Wendy’s Burgers 1 24* 6.95 166.80
2 24* 6.95 166.80
3 24* 6.95 166.80
Chicken sandwiches 1 32 6.28 200.96
2 28 6.28 175.84
Salads 1 16 8.96 143.36
2 16 8.96 143.36
Dominos Pizza All 4 21.43 85.72
Burger King Whoppers All 11 5.61 61.71

 * estimated

The grand total? According to our count, Trump spent about $2,911.44 on feeding the team. A sixth of that is the fries alone, though, so take with a grain of salt. (The fries; also the estimate.) Half the cost was incurred at McDonald’s alone.

Fantastic, light some candles to get it a bit warm in the ballroom. How barmy is this guy’s behavior who claims to be the leader of the largest economy in the world ?

Update: Some people have noted that the McDonald’s sandwiches and nuggets would be on the 2-for-$5 menu. If so, the total drops to $2,437.11. It also explains why there are so many more McDonald’s products than Burger King.

This total includes 319 sandwiches, 177 of which were hamburgers. Perhaps Trump’s “300” hamburgers figure referred to all of the sandwiches — or perhaps they weren’t all put out at the outset. (The low number of Whoppers and pizzas certainly does suggest that some food may have been held in reserve.) That the staff who were passing around Wendy’s on serving trays took those sandwiches directly from the table, however, seems to suggest that what you see in the photos was what was purchased.

Was it indeed enough food? We didn’t see photos of the aftermath, so we don’t know exactly what might have been leftover. But we do know that the team alone is made up of 120 players, weighing over 27,500 pounds combined. So, the average Clemson player weighs about 230 pounds.

Thanks to the also-aptly-named CalorieKing, we can also determine how many calories were waiting in that room: About 310,000 — excluding sauces and dressing. The spread also made up somewhere around 16,000 grams of fat. In other words, each player could eat about 2,600 calories of food assuming our counts and estimates above are correct. Football players apparently need about 50 calories for every 2.2 pounds each day, meaning the spread covered about half the team’s necessary caloric intake for the day.

Hopefully, though, they left some food for their coaches and other attendees.

Cold fast food in a cold room. People wearing coats and woolen scarfs. What else can one expect from a „cold dickhead“ with his mask.  What a humiliating showdown.

Peoples Voices.

„Bruh, we need to open the government ASAP. Straight dollar menu items being served at the #WhiteHouse. I’ve been saying for the last 2-3 years, no Hollywood script can come close to how entertaining this administration has been.“

„What a complete disgrace to the nation. Can you imagine being invited to the White House and being served McDonalds. What an insult! What a disgrace!“

„Trump serves Clemson McDonalds. They got dressed up and went to White House and get served fast food. How insulting.“

  Dressed up and hungry.

„He’s a national embarrassment. DC has AMAZING restaurants that are struggling during the shutdown. They could have been called in to cater for these kids. Trump feeding the Clemson Tigers a bunch of cold fast food is so… Trump.“

“Many people say I have the best chefs/staff in the White House, ever, in history. In fact, Abe Lincoln just called me and told me that, and he don’t lie — said Trump !“

„The man is a billionaire. We’re supposed to be impressed he thought athletes should be honored with fast food? He couldn’t spring for actual catering? Not impressed. I’m sure Putin would’ve helped him out if he needed more cash.“

„Interesting, if Trump has to pay, he buys McDonalds, if he has tax payers pay, for instance his parties at Mar a Largo and his golf clubs, he has the best food money can buy like Kobe beef and lobster. Bottles of water for 10 bucks.“

A ballroom dinner setup – during good old times.

„I seriously don’t understand this. Was he trying to be funny? Or disrespectful, or did his warped mind actually think this was appropriate?“

„Gee! #Trump showing his generous side because he paid for cold fast-food all by himself. @realDonaldTrump is such a cheap bastard with his fancy hotel down the street that could have catered. What is wrong with him?“

„If you asked an 8 year old what is the first thing they would do if elected President; this is it! Says it all really!“

The „8 year old“ president of the USA.   The world is laughing about a disgrace like him.

„This is a total embarrassment. Can you Imagine putting on your best suit to attend a White House dinner and walking into cold McDonalds?“

„I reckon a PR guy came up with the concept. Fast food, cold (topcoats), candles (no electricity). Gov shutdown but Pres battles on. What he didn’t expect was for the Pres to embrace it and boast about it!“

„On Tuesday morning, the number grew from 1,000 hamburgers to “over 1,000 hamberders,” which Trump claimed he paid for himself. He said it was all gone within an hour, which, again, means that each player would have had to have eaten over seven hamburgers, not to mention the other offerings.“

That’s all they served for about 140 people !! What a liar, paying for 1000 burgers ! True is that it is cold in the White House. People have to wear a coat !!

Trump the Liar.

„Great being with the National Champion Clemson Tigers last night at the White House. Because of the Shutdown I served them massive amounts of Fast Food (I paid), over 1000 hamberders etc. Within one hour, it was all gone. Great guys and big eaters!“
— Donald J. Trump (@realDonaldTrump) January 15, 2019.

„This is all very stupid, of course, but it’s a good example of how casually Trump lies. He does not strategically pick and choose where he is going to exaggerate the truth or which numbers he’s going to inflate. He just does it. It’s comes as naturally to the president as breathing. Or as scarfing down a Big Mac.“

  „1000 hamberders“ – yeah – what a bullshitter !!

„He was also lying. In the video, Trump notes that the White House brought in 300 hamburgers for the event. The president has made common practice of inflating numbers for his own benefit — whether it be the size of his inauguration crowd, or the trade deficit. He couldn’t help himself on Monday, either. After the dinner wrapped, Trump addressed the high-performance athletes he had just served sodium-rich sandwiches.“

The number of hamburgers tripled. “Do we give you some little quick salads that the first lady will make, along with the second lady — they’ll make some salads. I said you guys aren’t into salads,” Trump said. “Or do I go out and send out for about 1,000 hamburgers? Big Macs. So we actually did. We bought 1,000. Burger King. All American companies. Burger King, Wendy’s and McDonald’s.”

Meantime – same day.

Thousands of furloughed, unpaid federal workers are lining up for help from food banks ! Shame on a president who let’s his nation down like this !

When – finally – will get the US-people rid of this „red tie“ embarrassment ?

Decadent Ignorant Arrogance

Decadence in ancient Rome.

After my post about steak and Chateaubriand I had so many comments and likes. Thanks very much everyone. My friend Mathis sent an article (nice addition to the steak articles) about the French football star Franck Ribery kicking for Bayern Muenchen.

Then I’ve got the idea, that’s how our world is today! The following just happened in 2019.

Decadent Arrogant Footballer.

„During a holiday in Dubai, the visit to the in-restaurant „Nusr-Et“ was not to be missed – thought Bayern’s footballer Franck Ribery. And reached deep into the bag. Who wants to eat here, must have a bulging purse: On Wednesday evening Franck Ribery was with his buddy „SaltBae“ in the restaurant „Nusr-Et“ in Dubai.

Will this „gold-leaf-lacked steak taste at all ?

There, the Frenchman treated himself to a steak according to „picture“ for the equivalent of 1,200 euros (almost 1.400,– US dollars). Of course, the piece of meat was not just any kind of steak. For this penny money, there was a ribeye on the bone (Tomahawk style) covered with gold leaf. Ribery shared his food on Instagram with his fans.

„There is no better start to the year than with a pinch of salt and a visit to my Turkish brother!“, Ribery commented on his visit to the restaurant. His „Turkish brother“, Nusret Gökce, is the restaurant owner, and has become an Internet star for the past two years under the name „SaltBae“.“ (Original article with gmx.de)

Ja ja, Ribery that’s the feeling of a RED CARD, you know.

Short after that „Gold-dinner“ he had a lot of comments through media-stream. That’s his problem, because idiots like him have to post „every little shit“ they think is important. O.k, as it is his character, he went ballistic and answered in an unbelievable „shit-storm with F…words and Motherf…..words against his opponents“ and much more. Bayern Muenchen, as his home football club fined him with a very high (no one says a cipher), just said very high, amount. He will pay, of course, he is earning millions, but he is to arrogant to apologize !

My opinion is that everyone can do what he wants to do. It is obviously the time for decadent ignorant arrogance in our world now. People like that come and go ! Footballer Ribery can afford this kind of steak dinner. But he is not paying for the meat , he is paying for the arrogance of a restaurant and restaurant-owner-show like that.

The most decadent and arrogant style to salt a piece of meat I’ve ever seen. Nusreth Goekce.

Decadent Arrogant Cook.

As long as „famous names“ (or better called idiots) need to do things like this, people like Goekce are right to pickpocket their money.

Decadent Ignorant Arrogant President.

Same story, similar behavior. As long as American people (or better called idiots) need to elect (and keep in power) a president like Trump, he is right to pickpocket his nation. And as long as we all let this cunning,  ignorant person insult,  defraud, slander others – like us („I don’t care about Europe“, by example) he can get away with it.

Can you see the insidious arrogance in his face ?

Decadent Arrogant Restaurant Owner.

Or same story, similar behavior. As long as Japanese customers (or better called idiots) pay for a sushi of „blue fin tuna“, about 11.000,– US$ per kilogram, a restaurant owner like Kiyoshi Kymura is right to pay 3.100.000,– (over three million) for a 280kg blue fin tuna-fish and is right to pickpocket his customers for that.

„For the record price of around 3,1 million US dollars, a huge bluefin tuna has been auctioned in Tokyo. The 278kilogram animal was bought on Saturday at the first auction this year on the new fish market of the Japanese capital of the restaurant chain Sushi Zanmai.

The price is around 11.000,– US dollars per kilogram. The fish had been caught in Grandma, one of the best tuna catching areas in the country, on the northern tip of the main island of Honshu.

Nowhere is as much blue-tuna eaten as in Japan. Overfishing, which has been causing international criticism for a long time, has led to the species being seriously endangered.
A clever PR action.

Kiyoshi Kimura, president of the restaurant chain, had already bought the most expensive tuna from 2012 to 2017, at the first auction of the year. In 2013, he paid the last record price of the equivalent of around 1.26 million euros for a 222-kilogram bluefin tuna.

He is doing this year after year.

The high prices at the New Year’s auction are not so much the quality of the fish. Rather, the whole thing is a clever PR campaign at the beginning of the new fiscal year, about which the media also report every year.

Kiyoshi Kyuma, with knife, behind a 3 million dollar tuna-fish.

Kimura said after buying on Saturday, „I did not expect so much money, but since I can buy a good fish, I want the customers to try it.“

The auction took place on the Toyosu market, which opened in October in the port area of Tokyo. The 1935 built Tsukiji fish market, which was considered a Mecca of fish lovers, had previously been closed despite fierce protests. The move to the nearby artificial island had been delayed by almost two years as Tokyo was struggling with soil and air pollution at Toyosu.“ (Original article with ff/dpa)

A Kiwami sushi platter, one piece of blue fin tuna (top left). Pic hokuriku-arch. Priced at US$ 425,–.

This year’s winner is, unsurprisingly, the operator of several high-end sushi restaurants in Tokyo and plans to turn the prize fish into 13,000 pieces of sushi, according to the Financial Times. It is priced at US$350 and US$400 for the Premium “Kiwami” Course. Not a shabby win, as long as the „idiots“ pay for it.

We could go on and on with a list like that for ages. I am far from being a moralist, I enjoy a good lifestyle too, but some things are just over the top – sorry ! When I read over the article above, I thought its not soooo bad having an expensive sushi or steak or whatever. BUT IT IS TRULY DEVASTATING TO DEAL WITH A HUMAN BEING LIKE THE ONE BELOW ! AND HE CLAIMS TO BE THE LEADER OF THE FREE WORLD ! HA-HA-HA !

Ever seen a „6 year old“ in the White House ? Golden curtains, how decadent ! And always hiding his small hands.

Finally: What is the difference between the two pictures above ?
Right, Trump is not wearing glasses.    Same brain-age = same behavior !

Chateaubriand

From the time of Napoleon comes this recipe for a great meal. Chateaubriand is not a cut of beef, like many think, but the name for a recipe of a grilled beef tenderloin.

Chateaubriand is a perfect roast for the French Christmas table. That’s what we did a week ago. I love cooking, writing about, love research and history, but not so much photographing my cooking every 2 minutes. Sorry, but food photographing is not my hobby. Therefore I use many pictures of the internet, many are precise as it looks in my kitchen. Of course, if I know the copyright, I am glad to post it here.

History.

The Larousse Gastronomique indicates that the dish Chateaubriand was created by the namesake’s personal chef, Montmireil, for the Vicomte François-Rene de Chateaubriand. At that time (1822) Ambassador of France in England.  Montmireil also created in London a pudding called „Diplomate“.

History of the Chateaubriand. Pic. Bibliotheque Larousse.

Chateaubriand sauce.

Chateaubriand sauce is a culinary sauce that is typically served with red meat. It is also sometimes referred to as „crapaudine sauce“. It is prepared in a series of reductions, and typically accompanies Chateaubriand steak. Other dishes, such as tournedos villaret and villemer tournedos, also incorporate the sauce in their preparation. See 1st picture above.

The classic with wine reduction sauce. Or Crapaudine.

François-Rene, Vicomte de Chateaubriand (4 September 1768 – 4 July 1848), was a French writer, politician, diplomat and historian who founded Romanticism in French literature. Descended from an old aristocratic family from Brittany.

    Viscount Chateaubriand.

Born in Saint-Malo, the last of ten children, Chateaubriand grew up at his family’s castle (the chateau de Combourg) in Combourg, Brittany. His father, Rene de Chateaubriand (1718 – 1786), was a former sea captain, turned ship owner and slave trader.

Chateaubriand died in Paris during the Revolution of 1848 and was buried, as he had requested, on the tidal island Grand Be near Saint-Malo, accessible only when the tide is out.

Tomb of Chateaubriand near Saint-Malo. Wikipedia.

„Chateaubriand“ is a culinary term, which, like „Delmonico steak“, manages to convey meaning while remaining all but undefinable.

In fact, when defined broadly enough, the words Chateaubriand and Delmonico steak could conceivably be used to refer to the same piece of meat. Indeed, some wonder whether either term refers to a specific cut at all, or rather a particular method of preparing it.

Chateaubriand always refers to beef.

Still, even within the lavish tradition of culinary lore, an aura of particular extravagance surrounds Chateaubriand, named for a 19th century French aristocrat named François-Rene de Chateaubriand, whose chef is said to have invented it.

Even well known Spanish. Gastronoma histrica.

According to legend, Chateaubriand was a large, boneless cut of beef prepared by layering it within two or more lesser steaks, tying it into a bundle, then roasting or grilling it. When the outer steaks were charred, the roast was done, and the burnt outer steaks were then discarded. This technique supposedly ensured that the Chateaubriand was cooked evenly throughout.

It’s a distinctly more extravagant variation on the technique of barding, where a piece of meat is wrapped in fat before roasting it. Today’s wrapping is mostly prosciutto.

As if this were not decadent enough, Chateaubriand was famously served with chateau potatoes, a dish prepared by trimming individual potatoes down to the size of olives, then sauteing them in butter.

  Buttered chateau potatoes.

Beyond the fact that Chateaubriand today is no longer prepared by literally wrapping it in steak, there is little agreement about whether the word refers to a roast or a steak. Nevertheless, the interpretations fall into two main categories, depending on whether you’re at a butcher shop or a restaurant.

1. Chateaubriand is a Roast.

According to this school of thought, Chateaubriand is a roast made from the center section of the beef tenderloin and served with a wine demi-glace sauce.

This Chateaubriand preparation uses an approximately four-inch section of beef tenderloin, which is the most tender cut of beef. Because it’s so thick, the Chateaubriand must be roasted carefully to ensure it is properly cooked.

     The roast philosophy.

Supporting this definition is the fact that butcher shops will often market a center cut beef tenderloin roast as Chateaubriand.

Beware, however, a roast taken from the butt end of the tenderloin which is described as a Chateaubriand. Evidence of this deception is that almost invariably, this supposed Chateaubriand will be tied together with butcher’s twine, a step which would be wholly unnecessary for a true center-cut tenderloin roast.

2. Chateaubriand is a Steak.

In this worldview, Chateaubriand is a thick steak taken from the beef short loin, either a porterhouse or a T-bone.

       The Steak philosophy.

This version of Chateaubriand is generally grilled while basting it generously in butter (classical sources show that it was sometimes sauteed in butter). Traditionally served with something known as chateau sauce (essentially a variant on the Bercy sauce, but with the addition of lemon juice, tarragon and possibly mushrooms), modern Chateaubriand is usually served with Bearnaise sauce.

  The classic with sauce Bearnaise.

Recipes.

When ordering in a French restaurant, the Chateaubriand is usually for a table of two and comes served with a classic wine sauce.

This recipe is the traditional version of the restaurant favorite and comes seasoned very simply, roasted to perfection, and then sliced on the diagonal.

Be sure to make the quick shallot and wine sauce to accompany the meat and serve with chateau potatoes for authenticity. To ring the changes, you can serve Truffle Fries instead.

  Delicious restaurant serving for two.

Recipe 1 – in the oven.
Ingredients.

800 gram (c. 25 oz) beef tenderloin
2 tablespoons butter
2 tablespoons olive oil
salt and pepper, to season
1 shallot, finely chopped
1/2 cup strong (not sweet) red wine, like Tannat (UY) or Shiraz
1 tablespoon butter, softened
1 tablespoon fresh tarragon (or 2 teaspoons dried)

A New Years Party highlight at Millennium (2000) in Australia. What a meal, Chateaubriand made from a whole tenderloin,  2.780 gram (about 5 1/2 pound). No seasoning, just a bit for decoration, as you can see. It was a feast for 6 persons, served with 3 different sauces. The Crapaudine, the Bernaise and a variant of the Bercy (no fish stock). Side dishes were asparagus wrapped in prosciutto, butter grilled mushrooms, gnocchi, thyme infused potato cubes and garlic mashed potatoes. This main course was accompanied from a Penfolds Grange Shiraz.  Sorry, can’t show you anymore the happy faces !

How to do.

Preheat the oven to 190 C – 375 F.

Melt the butter and olive oil together in a large skillet set over medium-high heat until the mixture turns a bit cloudy and bubbly.

Place the meat in the pan and do not move it at all for at least 3 minutes. Using tongs, carefully turn the tenderloin on its side and brown it for 3 minutes. Repeat the same browning process on all exposed surfaces of the meat.

Place the tenderloin on a rack in a roasting pan in the oven (180 C or 350 F). Roast the beef 15 minutes for medium-rare, 20 minutes for medium, and 23 minutes for medium-well. These times depend on Thickness of the beef. Best would be to use a thermometer and roast the meat until the inner temperature reaches 60 C or 130 F.

Transfer the Chateaubriand to a warmed serving platter, lightly tent it with a single layer of foil, and allow it to rest, untouched, for at least 10 minutes.

This is how demi-glace wine sauce should look like.

Demi-Glace Wine Sauce.

While the tenderloin is resting, make the wine sauce. Saute the chopped shallots in the leftover pan juices in the skillet until softened and translucent.
Pour the wine into the skillet and bring the sauce to a boil, scraping up all the browned bits on the bottom of the pan.
Continue boiling the sauce until it reduces by half.
Add the demi-glace to the sauce and continue boiling the mixture until it becomes slightly thickened.
Remove the sauce from the heat and stir in the tarragon and softened butter.
Serve the Chateaubriand, sliced on the diagonal, with the wine sauce and chateau potatoes or truffle fries.

This is how we like a Chateaubriand. On garlic mash potatoes with baby peas and a delicious mushroom/cognac/red wine reduction.

Recipe 2 – on the grill.
Ingredients.

800 g  beef tenderloin
1/2 cup plus 2 tablespoons butter
1/2 cup watercress
2 tablespoons minced parsley
1 tablespoon lemon juice
salt and black pepper for seasoning.

Chateaubriand of the finest. Just the natural jus. But accomplished with some excellent side dishes. That’s professional cooking. Click on pics !!

How to do.

Trim beef tenderloin of unnecessary fat. The tenderloin should be about 1 inch thick, so if it’s too thick, pound to flatten. For grilling on the BBQ a bit more on the steak side.

Melt 2 tablespoons of butter and coat over the surface of the meat.

Meanwhile, melt remaining 1/2 cup of butter in a saucepan. Add parsley, lemon juice and season with salt and pepper. Pour into a small container and refrigerate.

Place the tenderloin on hot grill and sear on all four sides for about 3 minutes. Reduce heat and continue grilling for 5 to 10 minutes, or until it reaches the desired doneness. Remove from grill and slice into 1/2 inch thick slices. Serve garnished with watercress and butter mixture (its called maitre d’hotel butter).

  See Tenderloin or Brisket.

Tips.

Note: Sirloin butt roast and pork tenderloin are a great substitute to beef tenderloin.

Chateaubriand, made from the Brisket with very slow cooking and then grilling just before serving. Another delicious variant.

Further Information.

The beef tenderloin is the muscle group that gives us filet Mignon, tenderloin tips, and Chateaubriand. After it is trimmed and carved there can be 2 pounds or more of great kebabs, stroganoff, boeuf bourguignon, stir fry, stew, or grinding for burgers.

Trim. The fat is really easy to remove. To remove the silver-skin, slip a sharp pointy knife between the silver-skin and the muscle and slide it along with the blade angled upward slightly along the underside of the silver-skin. Don’t try to peel it with your hands or a paper towel like you would with pork ribs. The meat is so tender you will damage it. When you are done, you have what is called a „Tenderloin PSMO“ (Peeled, Side Muscle On), butcher pronounced „pismo“.

  „PISMO“.

Many chefs fold the ends in and then tie them in place so you have a long tube of fairly even thickness for roasting. Its nothing else but money making style. I am not fond of this procedure because the exterior of the meat can be contaminated in the slaughterhouse. That is not a problem if it is browned during cooking, but if it is folded in on itself, it will not get hot enough to be pasteurized. The risk is low, but it is a risk.

So I prefer to lop off the thin tapered tip. When a restaurant does this, you will often see „tenderloin tips“ on the menu. I set the tapered tip and the chain aside and either grind it for burgers or sausage, chop it for spiedies (kebabs), or slice it for stir fry.

The whole center section is called the Chateaubriand. More often, the Chateaubriand is cut into filet Mignon steaks about 1 1/2 to 2 inch thick, making 6 to 8 ounce steaks. If you leave the nose on you might be able to get 2 or 3 steaks, each 10 ounces. Here’s the breakdown of a typical beef tenderloin:

Raw weight around 7 pounds
Chateaubriand or fillets Mignon 3 pounds
Stir fry from chain and tip 2 pounds
Fat and skin trimmed off 1 1/4 pound
Steak from nose 3/4 pounds.

Le Chateaubriand  is also a restaurant on Avenue Parmentier in Paris, France. Chosen once number 9 between the 50 best restaurants in the world. In case you are in Paris have a Chateaubriand there, you will never forget it !    Enjoy your Chateaubriand !
