Easy to do – Tzatziki

tzatziki 8

Yes, very easy to make, your own original Greek Tzatziki. It tastes like in Greece and you can impress your guests.
The main ingredients are about 500g yogurt, 1/2 cucumber, 2 cloves of garlic and
2 tablespoons of extra virgin olive oil.

tzatziki 3   Yogurt, cucumber garlic and olive oil.

If you can’t get original Greek yogurt you can use „Quark 40% fat“ and „whole milk yogurt“ in equal parts. In Uruguay I use „Queso blanco“ and „joghurt natural“ in equal parts.

tzatziki 1  Clean out the seeds of your cucumber.

Wash ½ cucumber (normal size) or a whole Libanese cucumber (they are much smaller), clean out the seeds , grate coarsely and drain in a colander. I always scratch off a third of the green skin, otherwise it’s getting to bitter.
Peel 2 cloves of garlic and chop finely or press through a garlic press.

tzatziki 2  Mix all ingredients well together.

Mix all your ingredients well together and season with salt and pepper. That is all – Easy !! Where to use tzatziki ? Whereever you like, following a few ideas.

tzatziki 5    Very plain, tzatziki with baked potatoes.

Now it is up to your taste to mix in a few fresh herbs , by example some dill or basil. Or spice it a bit up with fresh chilli or like. For decoration always use a bit drizzled olive oil, that will give your sauce/dip a nice shine. I sometimes use also a sprinkle of paprika powder or chives, only for decoration,  as you see in the first pic.   Enjoy !!!

tzatziki 6 German-Greek, tzatziki potato salad and a „Schnitzel“.
tzatziki 7  A bit more work, tzatziki with Uruguayan milanesa accompanied with fresh tomatoes and onion slices on tortilla.
tzatziki 4   And the gourmet idea, tzatziki with smoked salmon and „Swiss Potato Roesti“.
